I assume your Linux ISOs are 64-bit
It could be that as you are UE|FI-booting, the video output is actually going to another video port and not the one your monitor is connected to.
Does the USB drive LED flash after selecting the ISO (i.e. it is loading the ISO into memory and running)?
Try Ventoy in text mode (F5) before you boot to an ISO?
