Under /index.html#vtoy_settings , there are multiple options for EFI Boot File:

snponly.efi
snp.efi
ipxe.efi


..What are each of these, and why would we use each one?

I'd also appreciate a documentation about this - can't find any explanation what these options mean.

These are the drivers that can be used during the iPXE boot process. You can read in detail the differences between them on the iPXE website in the section named drivers.
