would it be possible to install ventoy and a "real" (not persistent) ubuntu on the same usb-disk? and boot into the installed ubuntu partition from the ventoy menu?

Nifty tutorial.  I may give this a try.
OP, one warning the results may be very underwhelming.  I've not done this with Linux but have done so with the old Win2USB and WinToUSB methods.  The results are dismal to use as even the fastest USB drives are still far slower than a SATA SSD.  The Windows system I had was virtually unusable.  I just did it to do it and tossed it aside once I messed with it.  Perhaps Linux will do better.

Be sure to use the fastest USB drive you can get.  A USB C device may work better than anything.

Get a USB3 SSD and you'll be all good.  Or look for USB3 thumb drives that are rated for fast enough speeds.  https://www.minitool.com/news/fastest-usb-flash-drive.html
