Is there a way to make ventoy to use a default GNU GRUB theme? The dark theme with box that list my iso and stuff?

Yes I know that you can customize the theme on your own, but is it possible to use the default "no theme" grub

Do you mean "Text Mode"? Try press F7 in Ventoy menu.
